Can we talk about the 300th batch of hollandaise I made today?

I always thought it was a fussy, temperamental sauce, but hitting that number made me realize I've finally got the muscle memory down. Anyone else have a dish they've made so many times it just clicked?

Yeah, I've made so many omelets now I don't even think about it.

That's the real goal with cooking, right? When you stop looking at the recipe and just start moving. My hands just know how to flip it now. The cheese gets added at the right second without me even timing it. It feels less like a chore and more like a reflex.

My dad's old pickup truck is like that now, I can shift gears blindfolded. It's cool how our bodies just learn stuff.
