Can we talk about those 'chef's choice' knife sharpening services at the mall?
I dropped off my good 8-inch chef's knife at one of those kiosks, paid $25, and got it back with a totally uneven edge and a weird burr. It actually made my prep work slower and more dangerous for a good two weeks until I could fix it myself. Has anyone found a local sharpener they actually trust?

Honestly, I get the risk, but sometimes you're just paying for the show. I watched a guy at one of those sharpen a cheap butter knife to a razor edge in like two minutes. For twenty bucks, that's a fun little memory and a sharp knife. It's not always about the tool, you know? It's about the whole weird mall experience.
