Found a trick for fixing broken hollandaise without starting over

I was making eggs benedict for a brunch service last Saturday and my hollandaise split halfway through... it was that grainy, oily mess. Instead of tossing it, I grabbed a clean bowl and whisked in a tablespoon of cold water with a drop of lemon juice, then slowly added the broken sauce back in. It came together smooth in about two minutes and nobody at the table even noticed. Has anyone else tried a similar cold rescue or do you always start fresh?

Has anyone else had that moment where you're just staring at broken sauce questioning your life choices while the hollandaise stares back at you all greasy and judgmental? I've definitely been there more times than I'd like to admit, especially when I get cocky and try to multitask. My go-to panic move is usually just adding more butter and whisking furiously while sweating, which is honestly just a whole different kind of disaster.

My first time dealing with broken hollandaise I panicked so hard I just dumped a whole ice cube in there and prayed. It came out edible but my eggs benedict looked like it had cried on the plate. Your cold water trick sounds way more professional than my ice cube disaster. I definitely would have ended up tossing it and getting aggressive with a jar of mayo if I hadn't stumbled through it. Now I feel like I should frame this tip on my wall.

Oh man I gotta disagree hard on this one. Starting over is the only way to go if you want it perfect. That cold water trick might save the texture but you lose so much of that rich buttery flavor. I've tried it before and the sauce just ends up tasting watery and thin even if it looks okay. Plus once you break a hollandaise the emulsion is already compromised so it'll probably break again the second you try to keep it warm. Just crack fresh eggs and start over, takes 5 minutes and tastes way better.

@the_wren makes a good point about starting over. But once you've got three hungry kids yelling at you, five minutes feels like forever. Did you notice any difference in taste or was it just the texture that threw you off?
