I finally stopped searing fish in the cast iron after 4 years

Every Sunday I'd make branzino in the same pan, always sticky and falling apart. Then an old line cook at work said fish just wants a clean, light pan, so I switched to a cheap nonstick and it came out perfect the first time. Anyone else stuck on a habit just because it felt traditional?

Man, I was the exact opposite. Thought nonstick was for amateurs and refused to touch it. Then I tried a cheap one for eggs and never looked back. Sometimes the "right" way is just the way that works.
