I now salt my chicken a full day before cooking

Way juicier even if overcooked, that's what got me. Do you use the same amount of salt for a whole chicken as you would for pieces?

Absolutely. Started doing overnight dry brines last year and it's a complete game changer. The texture is completely different, way juicier even if you accidentally overcook it a bit.
