I spent $300 on a 'professional' mandoline slicer that's just a fancy finger guillotine
It's sitting in a cabinet after I nearly took off my thumb trying to julienne a carrot, so what's a safer tool for consistent veg prep that won't send me to the ER?

Oh man, I feel that. Those things are terrifying. I gave up on my mandoline after a close call with a cucumber. What actually works for me now is just a good old sharp chef's knife and a little practice on my cutting board. The control is way better, and my fingertips are all still attached. For super thin slices, a simple handheld V-slicer with a guard feels a lot safer than that fancy death trap.

Actually, a sharp chef's knife is great, but for real julienne, that's a lot of work. The handheld V-slicer with a guard is the right idea, but you have to use the guard every single time, no exceptions. That's where most people mess up. Just force yourself to use it, even for the last bit of carrot.
