I switched from a french press to a chemex and won't go back
Everyone in my kitchen crew swears by french press for the body but I tried a chemex at a brunch spot in Portland last week and the clarity of flavor was just way better. Am I missing something or do people just like the sludge?

Oh man, I gotta respectfully disagree here. I've tried chemex a few times and it's just too clean for me, like all that paper filter takes out the oils that give coffee its richness. French press might have some sludge but that's just the price you pay for a brew that actually feels like coffee in your mouth instead of fancy tea.

Tried a metal filter in my chemex for a while. Lets the oils through but keeps the bigger grounds out. Fixed the whole "fancy tea" problem for me without going full sludge mode.
