I think using a sous vide for steak is overkill most of the time

Last Friday I had a buddy over who swears by his sous vide for ribeyes. He spent like 90 minutes cooking a prime cut that way, then seared it. I just threw a similar steak in a cast iron pan at high heat, about 4 minutes per side, and honestly it came out just as good if not better with a better crust. Am I missing something here or do people just like the gadget factor?

Gotta admit I bought a sous vide on sale and used it exactly twice before it became a dusty kitchen trophy lol. My problem was I kept forgetting about the steak until like an hour later and then the sear felt more like a chore than the fun part. Cast iron all the way for me too, I just crank it up, throw a pat of butter in there, and call it a day.

MAN, I totally get what you're saying! My brother is obsessed with his sous vide and I honestly think it's just another expensive toy that makes you wait forever for the same result. A screaming hot cast iron pan gives you that perfect crust in like 10 minutes flat, no need to babysit a water bath for an hour. People act like it's some magic trick but really it's just slower cooking with extra steps. I'm with you on this one, no reason to overcomplicate a good steak.
