Just found out most commercial fryer oil is only good for 7-8 hours of use

I was reading through an old issue of a food service magazine from 2019 at my buddy's place and it had a study that said fryer oil starts breaking down after 7-8 hours of frying, not the 2-3 days most places run it. I've been pushing mine to almost 20 hours some weeks without changing it, probably ruining the flavor and making nasty stuff. Any line cooks out there actually tracking their oil hours or just winging it like me?

Same here, been running oil way longer than that without thinking twice about it. I had a fryer that went three full weekends once and just topped it off with fresh stuff when it looked low. No wonder some batches of fries came out feeling greasier than others.

Three whole weekends on the same oil? Dude, that’s insane, I’d be scared that stuff would catch fire or something.
