Just realized how much our mise en place has changed since my first kitchen job.

Back then, we used to keep everything in metal hotel pans on a speed rack. Now my station is all deli containers and squeeze bottles. It's cleaner, but I miss the clatter of those pans. Anyone else feel like the kitchen got quieter?

Man, the switch to plastic killed that classic kitchen racket for sure.

The old dish pit at The Harbor Inn had this huge, chipped ceramic sink. You could hear a single spoon hit it from across the whole restaurant... a real deep clang. They replaced it with a stainless steel one in 2005 and the whole sound of closing changed.

That Harbor Inn sink was a nightmare for my ears, but @graydavis has a point about plastic.
