My walk in died at 4:45 on a Friday and I served 60 covers out of coolers
The compressor on our walk in gave out right before dinner service last Friday at my spot on 5th Street. I had 60 covers booked and about $1,800 of product sitting in there getting warm by the minute. Instead of panicking I grabbed every bus tub and cooler we had and packed the proteins on ice in the back alley. We ran the whole service off two reach ins and a pile of sheet pans, and honestly the ticket times were fine. The repair guy quoted me $2,300 for a new compressor plus labor and said it would take four days. I'm now wondering if I should just buy a used unit off marketplace for $800 and gamble. Has anyone here had luck with used commercial refrigeration or am I asking for another disaster?
