Serious question, dropped $650 on a Thermapen ONE, worth it or did I just buy a status symbol?
I run a busy brunch line in Portland and I finally caved on a Thermapen ONE after burning through three cheap $20 instant reads in six months. The thing is fast, like one second fast, and it reads right every time even when I'm checking a roast in a 500 degree oven with steam flying everywhere. But here's my problem, my sous chef says a $30 Kizen does the same job and I'm just paying for the name and the fancy hinge. I used it for a week on everything from pork belly to poached eggs and yeah, it's nice not having to wait five seconds with my hand in the oven. But $650 is real money, that's a new set of Henckels or a month of gas for my truck. One of my line cooks said he's had his for four years and never looked back, but another guy said he dropped his once and the seal broke and water got in. So I'm asking straight up, is the speed and accuracy actually worth the price for a working cook, or should I return it and buy three backups and keep the change?
