Why nobody talks about how much better hand-chopping mirepoix was before food processors took over
I worked a brunch shift yesterday and diced 12 pounds of onions by hand in 15 minutes, and that knife feel and rhythm is something you just don't get from pulsing a processor, has anyone else noticed their knife skills getting sloppy after relying on machines too much?

Bet ive been using a processor for years and my knife skills are actually better now cause i understand what the machine is doing and can replicate it faster by hand when needed. The processor gives consistent cuts every time which matters more when youre running a tight line and need predictable cook times. Hand dicing 12 pounds is impressive but thats also 15 minutes of wrist strain that adds up over a career, plus you gotta factor in the cleanup time for all that onion smell on your board and knife.

No way, 12 pounds in 15 minutes? That's insane. I'd cut my fingers off trying to keep that pace.
