Best week of pour overs last month, but my grinder died on day 3

Last month I had 5 straight days where every single pour over I made tasted like something from a fancy shop, berries and all, and I swear it was because I finally got my water ratio dialed in after 2 years of guessing. Then my Baratza grinder seized up on the third morning and I had to use the cheap blade grinder from my camping gear, which gave me powder and boulders, so the next 4 cups were bitter and sour at the same time. Does your setup ever reward you like that out of nowhere, or is it always a fight between the gear and the beans?
