Fed up with my sour espresso shots

No matter how I adjust the grind, my espresso pulls are always sour. I'm using fresh beans and a decent machine. What else should I check?

Ever check your water temp? My friend had the same issue.

Yeah, the water temp thing actually helped. I just turned mine down a bit and it worked.

That "check the water temp" advice is so real. I see this everywhere, where one tiny setting fix solves a huge annoying problem. It's like my fridge making noise until I moved the dial a millimeter, or the wifi acting up until someone said to unplug it for a full minute. The fix is always something simple you'd never think to check.
