PSA: I swore the Aeropress was just hype from a Portland barista until I pulled 40 cups through it
Thought a $30 plastic tube could not beat my $200 pour over kit, but after 40 cups side by side the Aeropress gave me a cleaner cup with way less fuss, so what is the one coffee tool you wrote off that ended up earning a spot on your counter?

Forty cups is a good sample size, but the two brewers aren't really doing the same job. The Aeropress is an immersion brewer with a paper filter and you push it through under pressure, while a pour over like a V60 or Chemex relies on gravity and your pour. That's why it tastes "cleaner" and less fussy, you're basically removing the two things that make pour over hard, which are pour speed and bed depth. So it didn't beat your kit at its own game, it just plays a different game with fewer ways to mess up. Mine earned its spot for travel and small batches, but I still reach for the pour over when I want that lighter body.
