Tried a siphon brewer at a cafe in Portland, my pour-over tastes flat now

Honestly, I stopped at this small shop on SE Division last Saturday and watched the barista use a siphon brewer. He let me taste the same beans they use for their pour-over side by side, and the difference was wild. The siphon cup had this smooth, almost tea-like body while my usual V60 at home comes out a bit harsh and heavy. I went home and tried to mimic it with my own gear, but I can't get the same clarity, even with a finer grind and lower water temp. The whole thing cost me $8 for two small cups, but now I'm wondering if I need a new brewer or just better technique. Has anyone else switched brew methods after one cafe tasting, or am I overthinking my daily routine? My pour-over still beats drip, but it feels like a downgrade now.
