My buddy roasted me for storing coffee beans in the freezer and I had to switch

I used to keep my coffee beans in the freezer for months thinking it kept them fresh, then a guy at my local shop in Portland told me I was basically ruining them. He said the freeze-thaw cycle makes the beans absorb moisture and stale flavors from the freezer, which I never thought about. I switched to just keeping them in a dark cabinet in an airtight container and buying smaller batches every 2 weeks instead. The difference was huge - my morning brew stopped tasting flat and muddy, and I could actually taste the fruity notes again. Now I get my beans from the same roaster but only buy a 12oz bag at a time, and I finish it within 10 days. Has anyone else gotten called out for bad storage habits and had to change things up?

Wait, did your buddy actually explain why he thought freezing was wrong, or was he just going off some internet myth? I mean, I've heard conflicting takes from pros, some swear it works if you seal everything perfectly. Just curious if he gave you a real reason or just threw out the "moisture" thing.

My brother in law swore by freezing his bread to keep it fresh but he just threw whole loaves in there with no bag or anything. One time he pulled out a slice and it literally tasted like freezer burnt fish sticks from six months ago. I told him he needed to double bag that stuff at minimum but he just shrugged and kept eating it. Some people really don't care about their food storage game.
