My hometown coffee shop's pour over game went from sad to insane in about 5 years

I moved away from Portland in 2018 and came back last month, and the little shop on Hawthorne totally flipped their pour over setup. They used to just dump water from a kettle with no temp control, now they have a gooseneck and weigh every single dose to the gram. I asked the barista what happened and she said a local roaster named John started teaching classes in 2020 that changed everything. Has anyone else seen a place make that big of a switch in how they brew?
