That barista's pour comment got in my head

I heard a barista at Blue Bottle in Portland tell a customer that their water temp matters more than the beans. I always thought the grind was the big deal but I tried 201 degrees instead of my usual 205 and the taste was way smoother. Anyone else had a random tip like that flip their whole routine?

Wait, 201 degrees versus 205 can really make that big of a difference? That's like four degrees, barely anything. I've been stuck on grind size for years, thought that was the whole game. Kinda blows my mind that water temp can smooth things out that much. Guess I gotta dig out my thermometer and see what my tap water is actually doing.
