The barista who told me to stop pouring my espresso like a waterfall
I've been making espresso at home for about a year and always thought a fast, aggressive pour was the way to go, but this guy at a shop in Portland watched me and said "you're drowning the puck, slow it down like a lazy river." I tried his method that next morning, pouring in a thin spiral for 30 seconds instead of dumping it all in 8, and the crema came out WAY thicker plus the taste was less bitter. Anyone else get one random tip from a stranger that completely flipped their morning routine?
