3 years ago I could barely cook rice without burning it, now I'm making full dinners
Last week I made chicken tikka masala from scratch for the first time. It wasn't perfect but it was edible and my roommate Dave said it tasted like real restaurant food. About a month ago I finally stopped using those pre-made seasoning packets. Three years ago in February 2021 I set off the smoke alarm boiling pasta water. Has anyone else slowly built up cooking skills over a few years like that?

Oh man, @reeseperez that pasta water story still cracks me up! I think the REAL secret to getting good at cooking is just accepting that you're gonna ruin a LOT of meals along the way. Nobody talks about how many burned pans and sad, salty dishes it takes to finally get the hang of things.

haha yeah that "boiling pasta water" thing was rough... I had the pot on max heat and walked away to check my phone. Came back to the kitchen looking like a fog machine at a Halloween party. The smoke detector was screaming and the bottom of the pot had this black crust that took like an hour to scrub off. That was the same week I tried to make a grilled cheese and ended up with a charcoal briquette wrapped in burned bread. Now I can actually toast spices in a dry pan without setting anything on fire, which feels like a huge win honestly.
