One comment about my bread texture fixed my whole baking routine

A guy at the farmer's market said my sourdough crust was 'too shiny' and I laughed it off... then I realized he was right about the oven steam. I cut the steam pan after 10 minutes instead of 20 and the crust got this dull, crackly bite I couldn't get before. Has anyone else gotten product feedback that flipped a habit you thought was solid?

Hearing that from a stranger would’ve stung a little, but it’s wild how a random comment can crack something open. Same thing happened with my pie dough, a lady at a bake sale said my crust was “too uniform” and it bugged me for days. Turns out she meant I was overworking the dough, all those perfect edges meant no flake. Cut back on the mixing and the texture changed completely. It’s humbling when a total stranger sees what you missed for years.
