Appreciation post: The day I realized I was crowding my pan every single time

Took me about 6 months of soggy, steamed vegetables to finally figure out that cramming everything into one skillet was ruining dinner, and all it took was a cookbook tip from my aunt in Phoenix to set me straight.

Wow, 6 months? I would've given up after like two meals of soggy veggies. That's some serious patience.

@emmawood, crowding a pan is different from a one-skillet meal though. Have you tried actually following the recipe's instructions for spacing things out, or do you just dump everything in with no room? That's what I did for months and it made everything steam instead of sear.
