Found out a common kitchen thermometer is off by 12 degrees at high heat

Honestly, I was looking up pork shoulder temps for dinner tonight and stumbled on a test by America's Test Kitchen from last year. They ran 20 cheap probe thermometers through searing heat on a gas burner, and the average error was 12 degrees F over 350. So now I'm stuck debating: do you trust your probe for steaks or just go by feel? Ngl, I'm leaning toward ditching the gadget for a quick hand test tonight, but has anyone else seen this and changed their method?

Just ditch the probe for searing. Feel is faster and more reliable anyway.

Is it really that big of a deal either way though? I mean I get that feel is popular but we're talking about a few degrees temperature difference here not life and death. Most people using a probe probably aren't missing much unless they're trying to win a competition or something.
