Had a chicken breast come out like shoe leather last night

I was gonna stick with my usual pan-sear routine but after three bites I gave up and shredded the whole thing into a pot of canned enchilada sauce. Now it's actually edible on nachos. Anyone else salvage a ruined dinner with sauce?

Genius-level desperation" - yeah that about sums it up. I did something similar once with a pork chop that came out like a hockey puck. Sliced it thin as paper, threw it in a pan with some canned tomatoes and cumin, and it turned into this halfway decent makeshift carnitas situation. The sauce really does carry the day when the meat gives up on life. Feels like cheating but hey, the nachos don't know the difference.
