One rotisserie chicken saved my whole week

I bought a rotisserie chicken from Costco on Monday for $4.99. Turned it into tacos night one, soup night two, and sandwiches night three. Three dinners from one bird with basically zero extra cooking time. Has anyone else stretched a rotisserie chicken into more meals than that?

Grabbed a rotisserie chicken last week and got four meals out of it. Shredded the breast meat for a quick chicken salad with some grapes and walnuts. Used the legs and thighs in a simple stir fry with frozen veggies and soy sauce. Boiled the carcass with some onion and celery for a stock, then threw in the leftover scraps for a small pot of soup. Also picked off a few little bits of meat for a cold sandwich the next day. Felt pretty good about stretching it that far.

Gotta respect the stock move, most people throw the bones away which is basically throwing money in the trash.
