Saved my Tuesday dinner after a $20 ground beef fail
I was at the kitchen sink in my apartment around 6pm and realized the ground beef I thawed overnight smelled funky. Tossed it and grabbed a can of black beans and some leftover rice from Tuesday night, fried it up with cumin and a diced onion. Turned out better than the tacos I planned, and my girlfriend said it tasted like something from a real Mexican joint in Chicago. Anybody else keep a backup can of beans for nights like this?

Keep a can of beans in my glovebox. For emergencies.

Honestly, I've been there so many times. I started keeping a backup can of black beans and a bag of frozen corn in the freezer just for nights like that. Tbh, I also throw in some smoked paprika and a little bit of leftover bacon grease if I have it, really saves the whole dish. Ngl, that cumin and onion combo you used is basically my go-to, but I always add a squeeze of lime at the end to cut through it all. Your girlfriend was right, those simple pantry meals can taste way better than what you planned.
