My mom's apple pie filling used to be way too sweet for me
I mean, she'd always use 2 full cups of sugar with the Granny Smiths, and I'd just eat the crust. After she passed, I found her recipe box in the attic in Cincinnati and tried cutting it down to 1 cup, adding a bit of lemon juice. It's not the same, but it feels more like my own thing now. Does anyone else change up a family recipe to fit their own taste?

Oh man, that's the real stuff right there. I always cut the sugar in half too, lets the corn flavor come through.

Read a food blog once that said tweaking a recipe is how you make it yours, like adding your own signature. Cutting the sugar in half for that pie filling sounds perfect, lets the tart apples actually come through. The lemon juice was a smart move for balance, even if it's not exactly her version.
