Shoutout to my grandma who told me to stop overmixing biscuit dough
Everyone online swears by freezing your butter and using a pastry cutter but my grandma always said just use your hands and mix until it barely comes together. I kept getting tough biscuits following the popular advice so I tried her way last Sunday at her house in Tuscaloosa. They came out flaky and soft for the first time in like 2 years of trying. Has anyone else had luck ditching the fancy techniques for simple hands on methods?

Oh wow, @jamesm38 nailed it (I used to think fancy tools mattered but gluten is the real enemy).

I read somewhere that overworking the dough develops too much gluten which makes biscuits tough.

My friend Lisa from down the street tried to make biscuits for a church potluck. She whisked that dough for a solid 5 minutes because she thought "the more the better." They came out like hockey pucks. Her grandma took one bite, gave her that look, and said "next time stop when it just comes together.
