Hot take: Your iron temp might be ruining delicate fabrics.
I kept burning holes in chiffon until I checked the heat settings. Dropping it to low saved my whole project.

What if heat isn't the real problem here?

Tara's point about heat not being the only issue is spot on. Steam can be just as damaging if you're using too much on a light material like chiffon. The pressure from pushing down too hard with the iron can also stretch and misshape the fibers before the heat even burns them. It's really about the whole combo of settings and how you handle the iron. Testing a scrap first shows you how that specific fabric reacts to your specific method. You're checking the fabric's tolerance for everything, not just the temperature number.

Tara_smith82 might be onto something with it not just being heat. Honestly, I just tested a scrap piece first on a lower setting and it worked. That simple check saved my good fabric.
