Chat with a health inspector near the library food truck hub last Tuesday

I was waiting on a tamale truck downtown and a health inspector grabbed the same picnic table. He told me over half the trucks he visits don't hold cold items at the right temp, like 45 degrees instead of 40. Made me wonder, how many of you actually check the temps of what you're ordering?

Same thing with grocery store sushi, nobody checks the case temp until it's too late.

Oh man, glad you asked. I always give cold items a quick palm check on the lid or container before I pay. If it feels warm to the touch, that's a red flag. Also, watch how they handle the cooler doors - if they leave them propped open or keep digging through stuff for ages, the temp's probably not stable. I had a guy selling ceviche once and his ice bath was basically a puddle, walked right away. Just use common sense, if it looks like it's been sitting out too long, skip it.
