The best pho truck in Austin tanked hard after just 6 months

I swear Pho Wheels was unstoppable last spring. Their broth was spot on, and they had this crispy spring roll that ruined me for other trucks. But around September the owner swapped out his banh mi bread for the cheap grocery store kind, and now there is almost nobody in line when I drive past. Has anyone else watched a food truck slide downhill that fast?

Heard someone say cheaping out on bread is a death sentence for a pho truck.

Read somewhere that @sageadams said the same thing about a pho truck in Denver that tanked after they swapped out the baguettes. Is there really a point to having a pho truck if you can't even nail the bread?

Dude swapped out legit banh mi bread for that sad grocery store baguette that crumbles like a stale saltine. That's like a taco truck switching to pre shredded iceberg lettuce and calling it a day. Hard to bounce back when people notice you cheaping out on the basics.
