Oh man, you gotta be smart about this though. I've done this a bunch and the key is being cool about it, not like you're trying to show off. You gotta wait till the truck is slow, maybe right when they open or late in the lunch rush when there's no line. Then you just say something like "Hey, I heard you guys were testing some stuff out, any chance I could try whatever you're working on?" and smile. The ones I've done it with usually say something like "We've got this thing with pork belly and pickled onions but it's not on the menu yet" and they'll hook you up for half price or even free because they want honest feedback. Just don't be that person who does it with a line of ten people behind you, the staff will hate you and the chef might just say no out of spite.

Betting the kitchen staff hates when people try to pull that move. They're probably still working out the kinks on those test items and don't need some customer putting them on the spot.

Three years slinging dishes in a busy restaurant taught me that the kitchen absolutely hated that move, especially during a rush when they were already behind on tickets. Those test items usually had a specific prep schedule, so a surprise request could throw off the whole service for the next hour.
