Scales can really mess with the feel of baking though. My grandma's cookie recipe just says "add flour until the dough looks right" and they're perfect every time. Weighing everything kills that instinct. Some doughs, like bread, need you to adjust by touch as you go, not just follow numbers on a screen.

Your grandma's "add flour until it looks right" was my baking bible too. Then I had a string of flat cookies and finally gave scales a try.
