Honestly, my chicken wings went from soggy to perfect in about 15 minutes.

The game changer was patting them bone dry with a paper towel before they went in. Anyone else find a simple prep step makes that big a difference?

Wait, you only dried them with a paper towel? I always thought you needed to leave them in the fridge for hours. That's way too easy to be true.

My buddy Dave tried that fridge method once. Left his potatoes in there for like six hours and they still came out soggy when he cooked them. He texted me at midnight pissed off because his fries were sad and limp. I told him to just use a paper towel next time and he didn't believe me. Now he does it every time and his fries actually have crunch. The fridge thing is a myth man.
