Just realized you don't need to flip wings halfway through

Always flipped chicken wings every 8 minutes. Tried just letting them go 20 minutes straight at 400. Came out way crispier. Anyone else skip the flipping?

Well isn't that the truth. I used to flip wings every 7 minutes like clockwork but then I threw a batch in at 425 and walked away for 18 minutes. Came back expecting a mess but that skin was perfect, crispy all over. The key really is that high heat just dries the skin out faster so you don't need to baby them. Now I only flip if I'm brushing on sauce halfway through to keep it from burning.

Man I was the exact same way. Used to swear by the 8 minute flip, like it was some sacred ritual. But then I tried 20 minutes straight at 425 and the skin was like glass. I was skeptical because I thought flipping was the only way to keep the underside from burning but turns out the hotter heat just dries it out even more. Now I don't even bother with the flip anymore unless I'm doing a glaze at the end.
