My first attempt at air fryer chicken wings came out super dry, then I tried coating them in baking powder and leaving them in the fridge overnight and the texture was night and day different after 25 minutes at 375.

Before the baking powder trick the skin was rubbery and sad but after that overnight rest with just a teaspoon of baking powder they came out crispy like deep fried without all the oil, anyone else have a weird hack that totally changed their air fryer game?

Oh man the baking powder overnight trick is a total game changer. I started doing that with drumsticks and now I literally cant go back. Another thing that changed my air fryer life was tossing frozen fries in a tiny bit of oil and salt before cooking - they come out way more crispy than the directions say.

300 degrees? That sounds too low for good skin, youd get soggy chicken.
