My frozen fries went from soggy to perfect after I started soaking them first

I used to just dump the bag straight into the basket, and they'd come out kinda limp. Last month, I saw a tip online about a 30-minute soak in cold water. Tried it, dried them really well with paper towels, and the difference was huge. Now they get super crispy on the outside every single time. Does anyone else do this, or have a different trick for frozen potatoes?

Wait, is crispy food really that big of a deal? I get it, @fiona_murphy, but sometimes I just want to eat without planning a science project. Soaking stuff for hours feels like a lot of work for a texture.

My grandma's fried chicken recipe calls for a 12 hour buttermilk soak. The crust shatters when you bite it, it's not even the same food. That extra step turns a weeknight meal into something you remember for months. Sure you can skip it, but you're basically eating a different, worse dish. Texture is half the point of eating fried things.
