Talked to my neighbor Gary about his air fryer steak method
I always thought air fryers were just for frozen fries and wings, but Gary told me he does ribeyes in his at 400 for 12 minutes with a salt crust. I tried it last Sunday and the sear was BETTER than my cast iron pan. Has anyone else ditched their stovetop for this?

Get past that crust thing for a second and try this - I cut my steak in half before cooking so it fits better and gets more air flow. @laura_allen you might be onto something about the pan thing though because I think the air fryer gives a way more even cook all around since hot air hits every side. The bottom doesn't get soggy like when it sits in pan juices. I've been using a little wire rack inside my air fryer to lift the steak up even more and that extra gap makes the bottom like almost as crispy as the top. Gary should try that adjustment because 400 for 12 minutes might scorch if the steak is too thick or fatty but the half inch cut fixes that problem real nice.
