The crispiest fries come from soaking, not just coating.
I keep seeing people post pictures of soggy fries they doused in oil and cornstarch. That's not the trick. You need to soak cut potatoes in cold water for 30 minutes first, then pat bone dry, then toss in a teaspoon of oil. I did it side by side last week and the soaked batch was actually crunchy instead of limp. Has anyone else tried this or am I the only one who bothers?

30 minutes? I've been doing 15 and thought that was the whole trick. Now I gotta try the full half hour.

Read some article the other day saying the real benefits kick in around the 25-30 minute mark. Something about how your body starts burning a different energy source after the first 20 minutes or so. Ivan_mason you might be onto something with the half hour, but 15 is still way better than nothing. Think I'm gonna try pushing to 20 tomorrow and see how it feels.
