Appreciation post: I finally tried weighing my flour instead of scooping
My sourdough loaves in Phoenix stopped being so dense after I switched to grams, and my scale only cost $12. Anyone have a favorite brand of flour for bread making?

Hey, congrats on the better loaves! I read an article a while back that said flour can get packed down in the bag, so a cup scoop can have way more flour than the recipe expects. That extra flour makes everything dry and heavy. Switching to grams fixes that because weight doesn't lie. For flour, I've been really happy with King Arthur bread flour for my basic loaves. It's just super reliable and easy to find.

I get the whole scale thing, but my grandma baked for 60 years using cups and her bread was always perfect. Sometimes I wonder if we're overcomplicating it. I still scoop from the bag and my loaves turn out fine most days.

Yeah I was totally a cup scooper for years, swore it was fine. But man, switching to a scale and grams was a total game changer, dough is so much more consistent now.
