Can we talk about using bread flour in cookies?
I always thought bread flour in cookies was just a gimmick from food bloggers trying to sell you stuff. Then I made chocolate chip cookies with it last Sunday and the chewiness was a game changer, they held their shape way better than AP flour. Has anyone else tried swapping flours for different results?

Not buying it, bread flour just makes cookies tougher and drier in my tests.

I’ve swapped bread flour into my standard chocolate chip recipe a bunch of times and actually end up with chewier, softer cookies (like the kind from a bakery, you know?). The extra protein in bread flour helps hold structure but also soaks up more butter, so you just gotta adjust your mix a little, maybe add an extra tablespoon of milk or cream. If your cookies turn out tough, try reducing the flour by a tablespoon or two and see if that fixes the texture.
