I always thought weighing flour was a waste of time until my breads stopped being dense
For years I just scooped flour straight from the bag with a cup measure. My sandwich loaves were always a bit heavy. A baker friend in Tulsa finally convinced me to try a scale. I bought a cheap digital one and weighed 500 grams of flour for my standard recipe. The difference was huge, my crumb was way lighter and more even. Anyone else have a simple change that made a big difference?

Yeah, switching to a scale was a game changer for me too.

Read an article that said most people are way off with cup measurements. Flour gets packed down, you know? The scale just cuts out all that guesswork. Makes baking way more consistent, especially with tricky recipes. Honestly can't imagine going back to just using cups now.
