Swapped my stand mixer for hand kneading on sourdough

Used to let the KitchenAid do everything for 10 minutes. Now I hand knead for about 15 and the crumb has way more structure. Anyone else notice a difference going manual on wet doughs?

My Ankarsrum runs 20 minutes on sticky dough and I get a better oven spring than any hand kneading I did in 5 years of baking. Hands just can't produce the same consistent gluten development on high hydration. I timed it once, 70% hydration needed 22 minutes by hand to pass the windowpane test. The mixer does it in 12.
