That day at the county fair bakery demo changed my whole approach to sourdough

Oh totally, this reminds me of my friend Kelsey (she's a total baking nut like me). She went to that same demo last summer and came home convinced she could recreate the magic with her starter that she'd been neglecting for like six months. She left the jar on the counter and forgot to feed it for three days straight, and ended up with this weird pinkish goo that smelled like nail polish remover. She was so bummed that she almost threw the whole thing out, but I told her to just scrape off the top and start fresh with a little bit from the bottom. It actually worked somehow and now her bread is way better than before, so I guess that demo really does change everything.

Oh man, I totally get that feeling of almost trashing a starter after a bad neglect episode. It's rough when you think you've killed it, but I'm glad she stuck with it.
