Update: My sourdough starter finally doubled after 3 years of flat loaves

Turns out my tap water in Austin was too hard, switched to filtered and it worked. Anyone else have a simple fix that made a huge difference?

Wow, I always thought starter problems were about feeding, not water.

Yeah, christopherwilson is right. Water can wreck a starter fast.

Nah, water's the real killer. Starter gets too wet and it's done for. Seen it happen way more than underfeeding.
