Always thought my brisket was dry because I didn't wrap it, turns out I was cooking it way too hot

I was running my offset at 275 for years, just going by the gauge. Last month in Austin, a guy at a cookoff saw my setup and asked to check my grate temp with his Thermoworks Smoke. It was actually hitting 310 in the hot spot. I dropped it to 225 and held it there, and my next brisket was the juiciest I've ever made. Anyone else find their cooker runs way hotter than the dial says?

Man, that's wild. Makes you wonder how many cookers are just lying to us. I bet half the "bad" briskets out there are just victims of a cheap thermometer.
