Finally nailed a solid brisket after three years of trying
Three years ago in my Dallas backyard, my first brisket came out like shoe leather. Last month I got a new thermometer and watched the temp like a hawk. Last week I smoked a 14-pounder for 16 hours on my old offset, keeping it steady at 225. When I sliced it, the bark was perfect and the meat just bent. Anyone else have a cut that took forever to get right?

That "meat just bent" feeling is so good. @shanem37 is right about the tools, but for me it was learning to trust the rest, I'd always cut it too soon.

Yeah, that "watching the temp like a hawk" thing is the real game changer. I mean, it's crazy how one little tool can finally unlock years of trying.
