Had to choose between a stickburner and a pellet smoker for my backyard setup last month.

Went with the stickburner after a buddy told me I was 'cheating' with pellets. First brisket took 14 hours and I had to babysit it the whole time. Bark came out perfect though. Now I'm wondering if I should have just got the pellet smoker for weeknight cooks. Has anyone else made the switch back after going offset?

@viola_ward nailed it with the whole "staring at a firebox" thing. It's like we all decide we need to do things the hard way to prove something, then realize the easy way was the smart way all along. Happens with smoked meat, happens with lawn care, happens with fixing a leaky faucet instead of just calling a plumber.

Man that "cheating" thing hits different now. My buddy said the same thing about pellets, really made me feel like I was taking shortcuts. But after three straight weekends of waking up at 4am to feed the fire, I get why people go the easy route. I tried a pellet smoker at a friend's place last month and yeah the smoke ring wasn't as deep, but honestly the meat was still really good and I got to actually hang out with people. Made me realize spending 14 hours staring at a firebox isn't always the best use of a Tuesday night.
